The point Mark Bittman (my hero) is making is that we need to start seriously minimizing the amount of beef -- and any other meat product for that matter -- in our diets. The goal for me is to go three or four days per week without any meat at all.

I think I better find some more tasty ways to cook lentils, tofu etc.
I feel kind of bad about the giant family cookout coming up where we will be cooking big chunks of cow flesh on chunks of carbon fuel.
